Quick & Easy Potato & Tuna Patties

Simple & nourishing – the only two things we look for in recipes at the moment in our household! We don’t have time to fuss with fancy meal prep, but still want to fuel our bodies well. This is a hit at lunch time for our whole family because it is quick and easy to throw together & we have filled our bellies in no time. Best served with a big, fresh salad on the side (and some cheeky aioli goes down well with it too!)

Makes 10 patties. For our family this serves two adults and our one year old son.

 

Ingredients

1 medium sweet potato, steamed, mashed and cooled

2 tins of tuna, preferably in spring water- drained

Handful of fresh parsley or dill chopped

1 tablespoon olive oil

1/3 cup almond meal

salt and pepper to taste

 

Directions

  • Combine sweet potato, tuna and herbs together in a bowl. Mash/stir with a fork to ensure tuna chunks are separated and throughout the potato.
  • Form patties with mixture and coat with the almond meal.
  • Heat oil in pan & brown the patties on both sides over medium heat.
